Domaine Billaud-Simon Chablis 2012
Very pretty golden yellow in color shaded with gentle pale green. Bright, luminous and limpid. The taste is a pleasant compromise between richness, freshness and elegance; it remains full and supple right through to the finish. The ripe fruit with a hint of vanilla and a light vegetal and mineral touch are all in gentle harmony with the softness of its structure. It is a Chablis for the pure pleasure of the palate. The nose is irresistibly spellbounding. It Is a pretty example of a typical Chablis with the fruitness of peaches, bananas, citrus fruit and the softness of warm buns. Light vegetal shades harmonise with a discreet mineral touch, clean and fresh with finesse and reserve. Wine/food harmony: Salmon pâté - Sole and trout filets cooked with mussels - Quail terrine - Tongue in aspic with herbs - Warm lentil salad with crispy bacon pieces - Braised monk fish with fresh pasta - Chicken steamed in white wine, thyme and bay leaves - Ravioli filled with herbs and two cheeses - Pasta with cèpe mushrooms - Cheese and bacon flan - Red fruit soufflé - Meringues and custard - Crème brûlée with star anise.
